Welcome to Japonessa (/xapo’nesa/), a Sushi Cocina featuring a Japanese core concept with hints of Latino flair.
From traditional nigiri and sashimi to rolls decorated with jalapeño, cilantro, and mango, Japonessa takes traditional Japanese cooking fundamentals and fuses them with a little Latino love!
The Idea – Chef Owner Billy Beach wanted to step outside of the traditional Japanese style restaurant and create a concept that would offer sushi lovers new and exciting flavors. The Latin influence was inspired by Billy’s fellow sushi bar chefs, whom he has been working with and training since 1999.
The sushi chefs taught Billy about Latino flavors and ingredients, while he trained them on traditional Japanese fundamentals. To Billy, it was the perfect harmony. Japonessa was born.
Japonessa means “Japanese Woman” in Spanish. The restaurant is dedicated to Chef Owner Billy’s late mother, and is a symbol of gratitude to his sushi chefs who helped inspire this Japanese Latino concept.
